Who created Velveeta cheese?

Swiss immigrant Emil Frey created Velveeta for the Monroe Cheese Company in the early 20th century. He combined Swiss cheese wheels with curds and whey to develop cheese with a smooth texture when melted. Kraft purchased the Monroe Cheese Company in 1927 and has sold its version of the food item ever since.

How do you melt Velveeta?

Heat the Velveeta for 30 minutes on the low heat setting. Remove the lid and stir to prevent scorching. Replace the lid, and heat the Velveeta for an additional one to two hours on low heat.
  • Saucepan method: Slice the desired amount of Kraft cheese into 1/2-inch cubes of equal size. Place 2 tablespoons of butter into the saucepan and melt on low heat to completely coat the pan. This butter adds a protective layer to prevent scorching. Place cheese cubes into the buttered pan and stir frequently until smooth. As an optional step, you may add milk when the cheese is half-melted to produce a creamier consistency.
  • Double boiler method: Slice the desired amount of processed cheese into half-inch cubes of equal size. Pour about 3 inches of water into the bottom portion of the double boiler and bring this water to a rapid boil. Place 2 to 4 tablespoons of butter into the top half of the double boiler and heat until the butter coats the pan. Add the cubes to the top half of the double boiler and stir the mixture until smooth. If desired, you may also add milk while stirring.
